Ham and Leek Gratin recipe

This tasty dish is a great main course but the ham parcels also work well as a side dish.

Ingredients:

  • 8 leeks – the white part only
  • 8 slices ham
  • 40g butter
  • 40g plain flour
  • 500ml whole milk
  • 75g cheddar cheese
  • Salt and pepper

Method of Preparation:

  1. Steam the leeks for ten minutes over a pan of boiling water whilst you make the sauce.

  2. Melt the butter in a saucepan and once foaming, add the flour. Mix well and cook for five minutes or so, stirring constantly. Gradually add the milk, whisking constantly, until you have a smooth sauce.

  3. Add the cheese and season well, then cook for another 3 minutes or so.

  4. Once the leeks are cooked, allow them to cook for five minutes or so and turn the grill onto high.

  5. Wrap each leek with a slice of ham and then place into a baking dish with the wrapped part of the leek facing downwards.

  6. Pour the sauce over the parcels then place the baking dish underneath the grill for five minutes so that the sauce is golden brown and bubbling.

This dish serves four people as a side dish or two people as a main dish. For extra flavour, try adding 50g finely chopped sun-dried tomatoes to the sauce.
