Leek Recipe

Leek Hash recipe

This dish is really easy to cook as it's all pretty much done in one frying pan. Serve it with either a cheese sauce or some good old brown sauce.

Ingredients:

  • 4 leeks
  • 4 slices of bacon
  • 500g mushrooms
  • 2 onions
  • 250g potatoes
  • Salt and pepper
  • Pinch paprika
  • Pinch celery salt
  • 1 tbsp. oil

Method of Preparation:

  1. Put the potatoes into a pot of cold water and bring them to the boil. Cook them until fork tender.

  2. Meanwhile, prepare the vegetables.

  3. Finely chop the leeks by slicing them lengthways in half and then in half again, then cut them finely widthways. Finely chop the onion and thinly slice the mushrooms. Thinly slice the bacon.

  4. Heat the oil in a frying pan and add the bacon. Cook until the bacon starts to render down, then add the leeks and onion. Cook gently for five minutes or so until they begin to soften, then add the mushrooms. Let them brown slightly.

  5. Drain the potatoes and cut them into small cubes.

  6. Put the potato cubes into the frying pan with everything else and fry them for five minutes or so until browned and crisp.

  7. Season everything with salt, pepper, paprika and celery salt to your tastes.

  8. Serve hot in a big pile on your plate.

This hash is delicious served with a poached egg on the top. It serves four people.
